Winemaker Notes
This elegant sparkling wine blends various press cuts from the 2020 vintage sparkling wine harvest and a reserve base wine. After co-fermentation in stainless steel tanks, the wine was aged on fine lees until bottling during the summer of 2021. It was then bottled under a crown cap and aged in tirage bins for 38 months before being disgorged in August 2024 and finished with 3 g/L dosage. During its 38 months in tirage, the wine rested on its lees, a vital part of traditional sparkling winemaking. This extended aging process enhances the wine’s complexity, creating a richer texture, finer mousse, and more pronounced notes of baked apple, honeycomb, and wet stone. The additional time in tirage also softens the vibrant citrus profile, lending a rounder mouthfeel while preserving its fresh, lively aromatics. This release represents a more mature and refined expression of our NV Brut Blanc de Noirs, showcasing the transformative power of time.
