Winemaker Notes
This crisp bubbly blends various press cuts from the 2020 vintage sparkling wine harvest and a reserve base wine. After co-fermentation in stainless steel tanks, the wine was aged on fine lees until bottling during the summer of 2021. It was then bottled under a crown cap and aged in tirage bins for 19 months before being disgorged in January 2023 and finished with 5 g/L dosage.
During its 19 months in tirage, the wine rested on its lees, a vital part of traditional sparkling winemaking. This process enhances the wine's character by adding a subtle depth and complexity while preserving its vibrant, youthful energy. The relatively short tirage period highlights fresh citrus and crisp apple notes, creating an approachable sparkling wine with fine bubbles and lively aromatics.
