The grapes were harvested by hand on October 10 and carefully sorted, with whole clusters layered into a stainless steel tank for carbonic maceration. This essential process, a hallmark of Nouveau wines, lasted 19 days, allowing fermentation to occur within the intact grapes, creating bright, aromatic flavors and a lively profile. On October 29, the whole clusters were gently pressed, and the juice was separated from the skins. Fermentation continued in stainless steel tanks to preserve the fresh, fruit-forward character of the wine. The final step included filtering the wine for clarity before bottling, ensuring it was ready for immediate enjoyment. This traditional approach results in a vibrant, youthful wine that captures the essence of the harvest and is perfect for sharing during the holiday season.
