Tasting Notes
The 2021 Pinot Noir Blanc has a very light color and a matching light nose of opal apple, lemon cookie, and bright vanilla. On the palate, notice touches of vanilla and a drop of honey at the front, while middle notes of opal apple, lemon cookie, apple juice, and macadamia nut complement a pleasant, summery, thirst-quenching mouthfeel. The wine finishes with a lithe and clean lemon-lime finish with notes of sugar cookie that lasts slightly longer than one might expect.
Vineyard Notes
Sourced from a block of Wädenswil clone of Pinot Noir planted in 1988. Our Pinot Noir Blanc reflects the unique micro terroir of our estate vineyard. The grapes for this wine come from a particular hillside block that faces east and receives less late-afternoon sun, resulting in grapes ideally suited for white wine. This microclimate creates ripe fruit and bursts with flavor yet maintains naturally high acidity, essential for creating a refreshing white wine like Pinot Noir Blanc. This combination of factors makes our Pinot Noir Blanc a unique expression of our terroir and winemaking philosophy.

Winemaker Notes
The grapes were harvested and sorted by hand, and whole clusters were gently pressed to create this wine. The free run and first press cuts were settled overnight, then racked to neutral barrels for fermentation. When fermentation was complete, the wine was racked, blended, and returned to the barrel to age, discarding the heavy lees. The barrels were stirred bimonthly through the winter and into the early spring, undergoing partial malolactic fermentation. Before bottling, the wine was racked, blended, and filtered.
Food Pairing Notes
Serve with mild white cheese, lightly-salted or candied nuts, fresh berries, or even lightly sweet summer desserts like shortcake or almond cake, which reveal hints of nocino in the finish. Roasted chicken, grilled white fish, lobster, seared scallops, or smoked salmon.
