2017 Brut Prestige Cuvée

2017 Brut Prestige Cuvée
Crafted with patience. Released with purpose.

Estate-grown sparkling wine • Aged 77 months en tirage • Third disgorgement • 80 cases released

This wine is the result of a quiet transformation beneath the surface—where time, lees, and patience reshape everything from within. Aged over six years en tirage, this third disgorgement reveals how extended aging builds depth, refines texture, and deepens aromatic expression.

Crafted from estate-grown Chardonnay, Pinot Meunier, and Pinot Noir, it reflects the precision of a cool vintage. A mild summer and late ripening preserved the brightness and structure needed for long aging. Bottled in 2018 and left undisturbed for 77 months, the wine evolved slowly, its mousse becoming finer and its character more layered.

It opens with aromas of toasted brioche and marzipan, followed by baked apple, candied citrus, and roasted hazelnut. On the palate, its chalky texture and bright acidity carry through to a long, elegant finish.

This is not just a wine of craftsmanship—it’s a wine shaped by trust in time. Only 80 cases were disgorged in March 2025.

Pair with: Aged cheeses, roast chicken, seafood in beurre blanc, or mushroom risotto. Serve slightly warmer than a young Brut (50–55°F) to unlock its full aromatic range.

Tasting Notes
Toasted brioche, marzipan, and hazelnut lead with deep autolytic character. Fruit notes of candied citrus peel, baked apple, and dried apricot follow, with a chalky, mineral-driven palate. Fine mousse and seamless texture carry into a long, elegant finish lifted by vibrant acidity.
Vineyard Notes
Sourced from estate-grown blocks in the Yamhill-Carlton AVA. The 2017 vintage was shaped by a cool, wet spring and a mild summer with no extreme heat spikes, resulting in long, even ripening. These ideal conditions preserved acidity and structure, making this vintage well-suited for extended tirage aging.
Production Notes
50% Chardonnay, 29% Pinot Meunier, 19% Pinot Noir Traditional method. Bottled October 2018. Disgorged March 2025 after 77 months en tirage. 6 g/L dosage • 12.5% ABV Third disgorgement of this vintage cuvée; additional releases to follow.
Winemaker Notes
Fermented in stainless steel and bottled in October 2018 for tirage. Aged 77 months en tirage to highlight the evolving complexity of long lees contact. The mousse has become finer and more integrated, while aromatics have deepened. This third disgorgement was finished with a 6 g/L dosage to enhance balance, texture, and aromatic depth without diminishing the wine’s natural energy and freshness.
Food Pairing Notes
Pair with aged cheeses like Comté, Gruyère, or washed-rind styles. Excellent alongside roast chicken, seafood in beurre blanc, or mushroom-based dishes. Try with creamy polenta, savory crepes, or charcuterie for a luxurious match. Best served at 50–55°F to showcase its full aromatic range.
