Our 2017 Blanc de Blancs Sparkling Wine is crafted using a blend of Chardonnay and Pinot Blanc grapes sourced from our estate vineyard in the Yamhill-Carlton AVA and a nearby vineyard in the Willamette Valley. Aged on the lees for nearly four years, this wine boasts a rich complexity and depth of flavor. Delicate bubbles dance across the palate, carrying notes of crisp green apple, lemon zest, and a hint of brioche. Its refreshing acidity makes it a perfect pairing for seafood and light appetizers, while its elegant profile also makes it a lovely choice for special occasions.

Tasting Notes
Aromas of cardamom, talc, and lemon. On the palate, the small, plentiful bubbles deliver fresh, bright, citrus fruits, Asian pear, almond, wet stone, and subtle orange peel in the long finish.

Winemaker Notes
The grapes were harvested by hand, sorted, and whole cluster pressed. The juice was settled overnight and racked to stainless for primary fermentation. After fermentation, the wine was racked off the heavy lees and aged until it was bottled under cap the following summer—the wine aged in tirage bins for 4 years until disgorgement in the summer of 2022.

Serve chilled with oysters, caviar, seafood dishes (such as shrimp scampi or lobster thermidor), roasted chicken or turkey, light salads, and aged hard cheeses. sushi, ceviche, quinoa salad, grilled fish or vegetables, Thai or Indian curries, and spicy dishes. This wine can be enjoyed as an aperitif or paired with desserts that are not too sweet, such as lemon tart or fruit sorbet.
Other Notes
Blancs de Blancs, or white from whites, refers to the light-skinned grape varieties used in sparkling wines of this style. Typically, that grape variety is Chardonnay. However, a few producers use Pinot Blanc in their sparkling cuvées, which is the inspiration here.
