Wine Profile
Tasting Notes
Aromas of raspberry and rose lead to flavors of black raspberry, cherries, boysenberries, and plums. Earthy undertones, black tea, and a touch of baking spice add depth, while youthful tannins suggest excellent aging potential.
Vineyard Notes
Planted in 2001, the Dijon Clone 777 vines at our estate vineyard thrive at 781 ft. elevation in Willakenzie soils. These conditions contribute to lower yields and intensely concentrated flavors, allowing us to produce Pinot Noir that is both expressive and elegant.
Winemaker Notes
Hand-harvested and 75% destemmed, the grapes underwent a five-day cold soak to enhance extraction. During fermentation, the must was pumped over and punched down twice daily until dry, then gently pressed. The wine settled overnight before being transferred to neutral French oak barrels for 18 months of aging, preserving the purity and vibrancy of the fruit.
Food Pairing Notes
Pair this elegant Pinot Noir with wild mushroom risotto, herb-crusted salmon, or roasted duck with cherry glaze. For a vegetarian option, consider a caramelized onion tart or lentil stew with fresh herbs. Its versatility also makes it an excellent companion for artisan charcuterie and aged cheeses.
