Vineyard Notes
Established in 1995, Cardiac Hill is the steepest hillside in our vineyard. It spans just one acre and has a high density of 1,200 vines per acre. Planted with Pommard and Dijon 115 clones, this block thrives in distinct soils marked by ribbons of clay. These challenging conditions naturally stress the vines, resulting in lower yields and wines with exceptional concentration, complexity, and a truly unique flavor profile.
Winemaker Notes
Our winemaking process for Cardiac Hill Pinot Noir reflects both tradition and thoughtful craftsmanship. The grapes were hand-harvested and gently destemmed, with 25% of the whole clusters left intact to enhance structure and complexity. After a three-day cold soak to extract vibrant color and aromatics, fermentation began, with the vats receiving twice-daily attention through pump-overs and punch-downs to carefully develop the wine's character. Once dry, the wine was gently pressed, settled overnight, and racked into French oak barrels, 25% of which were new for aging. After initial blending in the spring, the wine returned to the barrel for an extended maturation period, spending 20 months developing its rich, nuanced profile.
