Winemaker Notes
The grapes for this wine were harvested by hand, sorted, and whole cluster pressed. The free run and first press cuts were settled overnight, then racked to neutral barrels for fermentation. When fermentation was complete, the wine was racked, blended, and returned to the barrels to age, discarding the heavy lees. The barrels were stirred bimonthly through the winter and into the early spring, undergoing partial malolactic fermentation. Before bottling, the wine was racked, blended, and filtered.

This wine pairs well with various foods, including roasted chicken, seafood, and creamy cheeses. Serve slightly chilled at around 55°F.
